Grapes: 100% Verdejo.
Wine-making: Mechanical night harvest (to preserve freshness of the grape). Crushed and chilled at 4-6ºC for 6-8 hours (cold maceration). Pressed in a pneumatic press, we extract the first must (“Virgen o flor”) to elaborate this wine. The alcoholic fermentation starts in stainless steel vats, controlled at 17ºC. The must is racket into French oak barrels for the rest fermentation. Aged with its lees for 5-6 months. Fining and racking. Cold stabilization before bottling.
Ageing: 6 months in 25% Acacia – 25% Allier – 25% Nevers – 25% Borges.
Tasting Notes: Straw yellow color, with brilliant clarity and green hints. Clean, with elegant legs thanks to his round and structured flavor. Strong ripe fruit aromas on the nose like peach, grapefruit, tangerine and some tropical and soft vanilla and smoked hints together with the characteristic aniseed ending. Very well structured in the mouth, round, elegant with a good acidity that makes the wine very nice to drink. Long, clean, mouth-watering finish.
Pairing: Matches perfectly as an aperitif with cured ham (Spanish “Iberico”), smoked ham, dry fruits (almonds, nuts, hazelnuts, etc), smooth cheeses, rice dishes (“paella”), smoked fish (salmon, eel, trout, anchovy), white meats (chicken, turkey, lamb), dishes using sauces with presence of butter, cream and vegetable dishes (corn, squash).
